Recipe - Butternut squash scones


Our tasty butternut squash scones with carrot batons were a hit with our children at lunch.  It's so satisfying to find food that is nutritious and that they adore :-)

Serves 8


215g plain flour
50g caster sugar
1 tbsp baking powder
50g butter
300g squash (cooked and mashed)
60ml room temp milk


  1. Mix together the flour and baking powder then rub in the cubed butter into crumbs
  2. Add the squash and the milk
  3. Mix dough and roll to approx. 1cm thick then cut and heat oven to 180 degrees
  4. Bake on a lined baking tray for 10-12 mins.
